* Flour (150 g)

* Semolina / Semolina (150 g)

* 1/2 tsp salt

* 3/4 cup water (150 ml)

* 2 tsp olive oil

* Turmeric (optional)

Ingredients for Mushroom Sauce:

*250g Mushroom fresh and mixed variety

*1/4 cup Cheddar or Parmesan or mix

*1/2 cup cream

*1 tbsp butter

Method of kneading the dough:

Mix all purpose flour, semolina and salt in a bowl. Build a well. Pour in water and olive oil, whisking together until well combined. Transfer to a work surface and knead into a smooth and soft dough, about 8-10 minutes. (If the dough is too wet add more flour, if too dry add more water).

Form a ball, wrap in cling foil and let cool in the fridge for 1/2 hour. Cut the pasta (see step-by-step pictures in the text above). After refrigerating the dough for 30 minutes, place it on a floured work surface and roll it out thin using a rolling pin (or pasta machine, if you have one).

Dust with more flour (to prevent sticking) and roll it loose. Use a very sharp knife and cut the roll into strips. Use your fingers to unroll the noodles and loosen them into several bundles to form a noodle nest. To cook, bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 2-3 minutes, and sear. Reserve 1 cup pasta water.

Recipe for Sauce:

Put paneer with fresh cooking cream in a pan on low flame, then add paneer. Cook them all on low flame till they come together. Add pasta water to get the consistency you like. Add the drained pasta to your sauce and serve hot.
