Mexican Vegetable Salad

material

For decoration:

– 2 tbsp extra virgin olive oil
Fresh green coriander roughly chopped
– minced garlic 2 cloves
– Oregano 2 tsp
– Lemon juice 3 tbsp
– Cumin powder 3/4 tsp
– Chili flakes 1/4 tsp

For the Salad:

Lettuce 200 grams
Tomato 3/4
– Corn 1/4 cup
Rajma 1/2 cup boiled
Capsicum – 2 small size

Step:

– Add olive oil, coriander, garlic, oregano, lemon juice, cumin powder and chili flakes in a glass and whisk well.
Cut lettuce, tomato, capsicum, corn and boiled kidney beans. Add dressing and toss ingredients.
– Delicious Mexican Salad is ready to be served.

stir fry tofu

material:

– Olive oil – 2 tbsp
Tofu – 200 grams
– Soya sauce – 1 tbsp
– Broccoli – 1 cup
Mushrooms – 8 to 10 button mushrooms
– Sesame seeds – 2 tsp
– Cooked Brown Rice – 120 grams

Step

Take olive oil in a pan.
Add tofu and fry till it turns golden.
Add a little soya sauce and fry for a minute.
Now add broccoli, mushrooms and a little soy sauce to it and fry for a few more minutes.
– Add sesame seeds.

Your tofu is ready to be served over brown rice.

Zucchini Basil Noodles

material:

– Zucchini 2
– Olive oil 2 tbsp
– garlic 1 clove
– Tomato 1
– Chili flakes 1/4 tsp
– Salt and pepper to taste
– fresh basil 1 cup

Step

Spiralize the zucchini.
– Heat olive oil in a pan and fry the zucchini in it.
– Add garlic and toss in chopped tomatoes for a minute
Toss well by adding chili flakes, salt and pepper
– Sprinkle on torn fresh basil and rotate!

Italian Vegetable Minestrone Soup

material

– Olive oil – 2 tbsp
Onion – 1, chopped
Carrot 1, cut into squares
– handful celery
– Tomato paste 2 tbsp
– Salt and pepper to taste
– garlic 1 clove
– Ajwain 1 tsp
– Thyme 1/4 tsp
– bay leaf 1
– Chili flakes 1/4 tsp

Step

– Heat some olive oil in a pot
Add chopped onion, carrot, celery, tomato paste and a pinch of salt to it.
– Cook for 7-10 minutes
– Add garlic, oregano and thyme. run for 2 minutes
Add salt, bay leaf and chili flakes.
– Season with black pepper. serve hot.
